Cauli and Parsnip Fried Rice
Instructions
1. Pulse cauliflower and parsnip in a food processor into a rice like consistency.
2. Heat the olive oil in a deep frying pan or wok over a medium heat, add the onion and garlic and saute for a minute or so, then add your ‘rice’ and saute for another 5 minutes.
3. Throw in the rest of the veges, toss them through and cook for just a few minutes, then remove from the heat. Season to taste, drizzle over the tamari, scatter over the chopped chilli and reserved celery leaves.

1 cauliflower, chopped into small chunks
2 parsnips, roughly chopped
1 Tbsp oil
½ onion, diced
1 garlic clove, finely chopped
4 celery stalks, chopped (reserve leaves)
1 red capsicum, diced
1 zucchini, grated
1 carrot, grated
1 cup chopped broccoli
Salt and pepper
1 Tbsp tamari
1 chilli, chopped
