Green Curry
Instructions
1. Mince the onion, garlic and ginger. Roughly chop the mushrooms and capsicum. Heat the oil in a pot on medium heat and add the chopped onion, garlic and ginger.
2. Once the onions are translucent add the curry paste and mix it into oil.
3. Add the turmeric and black pepper, then the mushrooms and capsicum, mixing it all so the veges are coated in the spices and oil.
4. Add the coconut milk and let the curry simmer until it's thickened up and the veges are tender.
5. Throw in the peas and as soon as they are cooked, take the curry off the heat and enjoy it with some rice! Top with coriander and peanuts (optional).
Ingredients
Curry:
1 onion
3 garlic cloves
1 Tbsp ginger
1 heaped Tbsp coconut oil
2 Tbsp green curry paste
1 tsp turmeric powder
½ tsp ground black pepper
2 cups mushrooms
1 capsicum
1 cup peas
1 can coconut milk
Pair with:
2 cups cooked brown rice
Coriander (optional)
Peanuts (optional)
