Kidney Bean Stir-Fry

Instructions

1.    In a pan saute the onion, oil, ginger and garlic for 5 minutes or until clear.

2.     Add vegetables and cook until they are just cooked yet still crunchy.

3.    Add remaining ingredients and toss in the pan for 2 minutes or until heated through.

 

Makes: 6 x 1 cup serves

 

Ingredients

  • 1 large onion, chopped

  • 2 Tbsp oil

  • 2 cloves garlic, crushed

  • 2 Tbsp ginger, crushed

  • 10 mushrooms, quartered

  • 1 red capsicum, diced

  • 1 courgettes, chopped

  • 1 large carrot, diced

  • 1 cup frozen peas

  • 1 Tbsp poppy seeds

  • ½ tsp salt

  • 1 Tbsp honey

  • 1 cup cooked brown rice

  • 400g tinned kidney beans
