Tofu and Grilled Vege Tofu

Instructions

1.    Saute the tofu on med-high heat with a bit of olive oil, rice wine vinegar and tamari (soy sauce) until it browns. Set aside.

2.     Chop all the veges. In a large pot, saute the onions, garlic and all the spices together with 2-3 tablespoons of olive oil and 1 tablespoon of rice wine vinegar until translucent and softened. Add the remaining ingredients, including the tofu and veges. Let the mixture simmer on low heat for 30 minutes or so, until the broccoli is cooked to your liking.

3.    Serve with whole grain brown rice in bowls (optional - with chives, hot sauce, and sweet basil).

Ingredients

  • 1 onion

  • 4 garlic cloves 

  • 1 head broccoli

  • 1 grilled red capsicum

  • 2 grilled zucchinis

  • 2 packs tofu

  • 1 can coconut milk

  • 6 cups vegetable stock

  • 3 Tbsp raw sugar (or other sweetener)

  • 3 Tbsp tamari (or soy sauce) 

  • 3 bay leaves

  • 3 Tbsp curry powder

  • 1 Tbsp each of coriander, paprika, cumin, turmeric, garlic, and onion powder

  • 1 tsp each cinnamon, chili flakes, and dill 

  • ½ tsp chili powder
