Tofu Butter Chicken

Instructions

1.    Slice the carrots thinly and roast in a little oil for 20 minutes at 150°C.

2.     Saute onions, ginger, garlic, oil in a large pot until clear.

3.     Add spices and mix well.

4.     Add tomatoes and cook for around 5 minutes or until bubbling.

5.     Gently mix in the remaining ingredients.

6.     Check heat and salt for your taste and add more salt/chilli as required.

7.    Serve with brown rice.

Ingredients

  • 600g tofu, cubed

  • 3 large carrots

  • 1 large onion, sliced

  • 2 cloves garlic, chopped

  • 2 Tbsp oil

  • 1 Tbsp ginger

  • 1 tsp cumin

  • 1 tsp turmeric

  • 1 tsp coriander

  • 1 tsp garam masala

  • 1/8 tsp chilli powder

  • 1 tsp salt

  • 2 x 400g tinned tomatoes

  • 200ml coconut cream
