Vege Burrito Bowl

Instructions

1.    Cook rice according to package instructions

2.     Saute sliced onions and capsicums over medium heat, stirring frequently, until tender - approximately 10 minutes

3.     Layer rice, beans, and cooked onions and capsicums in a bowl

4.     Top with remaining ingredients (as desired)

5.    Use fresh lime juice and/or salsa as "dressing"

Ingredients

  • 2 cups cooked brown rice

  • 1 can black beans, drained and rinsed

  • 1 can corn

  • 1 onion, thinly sliced

  • 3 capsicums (red, yellow, green), thinly sliced

  • 1 cup tomato, diced

  • 2 cups lettuce

  • 1 can black olives

  • 2 green onions, sliced

  • 1 avocado, sliced

  • Fresh cilantro

  • Fresh lime

  • Salsa
