Coconut Date Cookies
Instructions
1. Preheat oven to 180°C. Place all ingredients in a food processor. Process for about 10 seconds. Scrape sides of bowl, and process another 15 -20 seconds or until thoroughly mixed. Some of the nuts should still be in large pieces (not finely ground).
2. Scoop out about two tablespoons of dough and shape into a ball. Place on a baking tray. Repeat with remaining dough. Use the palm of your hand to flatten. Bake for 15-20 minutes or until slightly browned on the bottom.
Makes: 14 servings (serving size: about 1 cookie)
Ingredients
½ cup unsweetened coconut milk
½ cup coconut flour
½ cup roughly chopped dates
¼ cup Date Honey *see recipe
¼ cup whole almonds
¼ cup walnut halves and pieces
Recipe Notes
You can also make these cookies without a food processor. Chop the nuts and dates into smaller pieces, and stir until well combined.
