Kimchi Fritters with Cashew Aioli
Ingredients

2 cups kimchi 
- 
2 cups chickpea flour 
- 
1 cup water 
- 
2 Tbsp cornflour Toppings 
- 
1 avocado, diced 
- 
Sweet chilli sauce 
- 
½ packet bean sprouts 
- 
Cashew aioli (mix all ingredients together in a blender until smooth: 1 cup cashew nuts, 3 Tbsp lemon juice, 1 Tbsp apple cider vinegar, 2 garlic cloves, ½ shallot, ½ cup water, 5 Tbsp olive oil, sprinkle of turmeric for colour). 
Instructions

Blend kimchi in a food processor until smooth. Mix together in a bowl with other batter ingredients until well combined. 
- 
Heat a dash of oil in a frying pan over medium heat. Spoon batter into pan and flatten into circles (should make 16 small fritters), cook until golden brown on both sides. 
- 
Place fritters on a serving tray. Top with some cashew aioli, avocado, sprouts and a drizzle of sweet chilli sauce.
