Chicken and Tzatziki Pita's
Ingredients
- 
8 wholemeal pita pockets 
Chicken
- 
4 chicken breasts, diced 
- 
2 tsp dried coriander 
- 
2 tsp cumin 
- 
1 Tbsp olive oil 
Salad
- 
1/2 lettuce, shredded 
- 
1 tomato, diced 
- 
1 red onion diced 
Tzatziki
- 
1/2 cup Greek yoghurt 
- 
1 Tbsp tahini 
- 
1/4 telegraph cucumber, diced 
- 
1 Tbsp lemon juice 
- 
1/2 Tbsp fresh dill (or 1/2 tsp dried) 
- 
1/2 tsp minced garlic 
- 
Salt and pepper 
Instructions
- 
Mix chicken, coriander, cumin and olive oil in a bowl. 
- 
Fry chicken in a pan over medium heat for around 10 minutes, until cooked through. 
- 
Mix salad ingredients in a bowl. Mix Tzatziki ingredients in another bowl. 
- 
Toast pita pockets and divide chicken, salad and Tzatziki between pitas. 
Serves 4
