Healthier Ginger Slice

Ingredients

  • 1.5 cups cashew nuts

  • 1.5 cups dates

  • 1/2 cup oats

  • 1/2 cup desiccated coconut

  • 200g lite cream cheese

  • 1 tsp vanilla

  • 1/4 cup icing sugar

  • 1 Tbsp maple syrup

  • 2 tsp ground ginger

  • 2 Tbsp crystallised ginger, chopped

Instructions

  1. Blitz cashews, dates, oats and coconut in a food processor into a fine crumb.

  2. Press into a lined baking tray and freeze for 30 minutes.

  3. In a bowl mix the cream cheese, vanilla, icing sugar, maple syrup and ground ginger until smooth and well combined.

  4. Spread over the base and sprinkle with crystallised ginger. Freeze for at least 1 hour.

  5. When ready to serve, remove from the freezer and slice. Store leftovers in the freezer.
