Healthier Ginger Slice
Ingredients

1.5 cups cashew nuts 
- 
1.5 cups dates 
- 
1/2 cup oats 
- 
1/2 cup desiccated coconut 
- 
200g lite cream cheese 
- 
1 tsp vanilla 
- 
1/4 cup icing sugar 
- 
1 Tbsp maple syrup 
- 
2 tsp ground ginger 
- 
2 Tbsp crystallised ginger, chopped 
Instructions
- 
Blitz cashews, dates, oats and coconut in a food processor into a fine crumb. 
- 
Press into a lined baking tray and freeze for 30 minutes. 
- 
In a bowl mix the cream cheese, vanilla, icing sugar, maple syrup and ground ginger until smooth and well combined. 
- 
Spread over the base and sprinkle with crystallised ginger. Freeze for at least 1 hour. 
- 
When ready to serve, remove from the freezer and slice. Store leftovers in the freezer.
