BBQ Chicken and Vege Stir-Fry
Ingredients
- 
10 chicken thighs 
- 
2 red onion, quartered 
- 
2 leeks, sliced 
- 
2 packets of beans (250g), halved 
- 
Olive oil 
- 
Salt and pepper 
- 
Marinade ingredients: 
- 
½ cup olive oil 
- 
1 tsp salt 
- 
½ tsp pepper 
- 
½ tsp paprika 
- 
½ tsp cumin 
- 
¼ tsp cayenne pepper 
- 
2 cloves garlic, chopped 
- 
3 tablespoons, chopped onion 
- 
½ cup chopped fresh parsley 
- 
1 ½ cups apple cider, or apple juice 
Instructions
1. Mix marinade ingredients together.
2. Cover chicken with marinade, set aside.
3. Prepare vegetables.
4. BBQ chicken until cooked through, around 15-20 minutes.
5. Drizzle veges with olive oil, salt and pepper and BBQ until softened, around 5 minutes.
6. Serve up the veges on plates and top with chicken.
