Nutty Seed Bread
Ingredients
- 
1 cup sunflower seeds 
- 
1/2 cup almonds, chopped 
- 
1/2 cup linseeds 
- 
1 1/2 cups rolled oats 
- 
2 Tbsp chia seeds 
- 
4 Tbsp psyllium husks 
- 
1 tsp salt 
- 
1 Tbsp honey 
- 
3 Tbsp coconut oil, melted 
- 
2 cups water 
Instructions
- 
Line a loaf tin with baking paper. 
- 
Combine all dry ingredients in a bowl. 
- 
In another bowl whisk the honey, coconut oil and 1 1/2 cups of the water. Stir in the dry ingredients until well combined (mixture should be thick and slightly wet - if necessary add the remaining water bit by bit until you reach this consistency). 
- 
Transfer mixture into loaf tin, smooth the top and leave to sit for two hours or overnight. 
- 
Preheat oven to 180°C. Bake in the middle of the oven for 20 minutes. Carefully remove bread from loaf tin, placing it upside down on an oven rack and bake for a further 20-30 minutes until it sounds hollow when tapped. Let the loaf cool completely before slicing. Freezes well.
