Bean Salad
Ingredients

2 cans Four Bean Mix, drained 
- 
250g green beans, chopped 
- 
1 medium kumara, diced 
- 
1/2 red onion, diced 
- 
1 green capsicum, chopped 
- 
1 red capsicum, chopped 
- 
2 celery stalks, chopped 
- 
2 Tbsp balsamic dressing 
- 
Salt and pepper 
Instructions
- 
Dice kumara and place in an oven tray lightly coated with olive oil. Roast at 180°C for 20 minutes or until cooked through and slightly crispy. Set aside to cool. 
- 
Chop up vegetables, and drain and rinse canned beans. 
- 
Toss all ingredients together in a bowl and top with balsamic dressing, salt and pepper.
