Asian Chicken Salad
Ingredients
- 
500g chicken, diced 
- 
2 tsp Chinese 5 spice 
- 
2 tsp ginger, minced 
- 
3 cups cabbage, finely chopped 
- 
2 cups bok choy, finely chopped 
- 
2 carrots, grated 
- 
1 bunch spring onions, finely chopped 
- 
1/4 cup fresh coriander, finely chopped 
Sauce
- 
3 Tbsp soy sauce 
- 
3 Tbsp lemon juice 
- 
1.5 Tbsp sweet chilli sauce 
- 
1 tsp sesame oil 
- 
2 tsp rice vinegar 
- 
2 tsp sesame seeds 
- 
1/4 cup cashew nuts 
Instructions
- 
Coat the chicken in Chinese 5 spice and ginger, and fry in a pan with oil, salt and pepper until cooked through. 
- 
Mix the salad ingredients together (cabbage, bok choy, carrots, spring onions and coriander). 
- 
Mix the sauce ingredients and pour over the salad. 
- 
Top the salad with cooked chicken, sesame seeds and cashew nuts.
