Eggless Banana Bran Mini Muffins with Cinnamon and Ginger
Ingredients

1 1/2 cups wholemeal flour 
- 
1/2 cup oats 
- 
1/2 cup coconut (or brown) sugar 
- 
1 tsp baking powder 
- 
1 tsp baking soda 
- 
1 1/2 tsp cinnamon 
- 
1 1/2 tsp ground ginger 
- 
3 bananas, mashed 
- 
1/2 cup olive oil 
- 
1/2 cup milk (use almond or soy milk to make them dairy free) 
Instructions
- 
Mix the dry ingredients and the wet ingredients separately in two bowls. 
- 
Add the wet ingredients to the dry ingredients, mix well. 
- 
Bake in the oven at 180°C for 15 minutes (for mini muffins) or until skewer inserted comes out clean. 
Makes 20 mini muffins. Freezes well.
