Honey-Soy Glazed Salmon

Ingredients

  • Olive oil

  • 4 tsp minced garlic

  • 3 cups water

  • 300g rice

  • 2 carrot, chopped

  • large handful beans, ends removed

  • 2 bok choy, chopped

  • 4 tsp minced ginger

  • 4 salmon fillets

  • 4 Tbsp olive oil

    Glaze:

  • 8 tsp honey

  • 5 Tbsp soy sauce

  • 2 Tbsp sesame seeds

  • 2 tsp minced garlic

Instructions

  1. Add a dash of oil to a pot, when hot add the garlic. Cook for a few mins, then add water and rice.

  2. Bring water and rice to the boil, then lower heat and simmer for 10 minutes. Take off the heat and let sit without removing the lid for a further 10 minutes.

  3. While rice is cooking, stir-fry the veges and ginger in a dash of water until soft (around 10 minutes). Remove veges and place into a covered bowl to keep warm.

  4. In the same pan, add the olive oil. Once hot add the salmon fillets and cook on either side for 3-4 minutes until cooked through.

  5. Mix together glaze ingredients and drizzle over salmon in the last couple of minutes of cooking.

  6. Plate up the rice, topped with salmon and veges on the side.

Serves 4.
