Thai Green Fish Curry with Garlic Turmeric Rice
Ingredients

2 cups rice 
- 
30g butter 
- 
2 tsp garlic, minced 
- 
1 tsp turmeric 
- 
1 onion, diced 
- 
3 tsp garlic, minced 
- 
3 Tbsp Thai Green Curry Paste 
- 
2 tsp ginger, minced 
- 
2 tins coconut milk 
- 
juice of one lemon 
- 
1/2 cup water 
- 
1 capsicum, diced 
- 
1 broccoli, chopped finely 
- 
500g fish fillets, diced 
Instructions
- 
Cook rice, butter, garlic, turmeric and 3 cups of water in a rice cooker. 
- 
Soften the onion in a pan with some oil for 3 minutes. Add curry paste and stir for 1 minute or until fragrant. 
- 
Add ginger and ginger, stir for 1 minute. 
- 
Add coconut milk, water and lemon juice. Bring to the boil and simmer for 5 minutes. 
- 
Add the vegetables to the sauce mix. Simmer for 10 minutes or until vegetables are cooked. 
- 
Add the fish and simmer for a further 5-10 minutes or until cooked through. 
- 
Serve fish curry on the garlic rice.
