Kale Salad with Avocado and Halloumi
Ingredients
- 
6-8 kale leaves, finely chopped 
- 
Juice and zest of half an orange 
- 
1 Tbsp balsamic vinegar 
- 
1 Tbsp tamari 
- 
1 tsp minced garlic 
- 
2 cups grated carrot 
- 
1 cup finely chopped red cabbage 
- 
1 cup toasted sunflower seeds 
- 
1/2 tsp toasted cumin seeds 
- 
1/4 cup currants 
- 
1/4 cup cranberries 
- 
1/4 red onion, finely chopped 
- 
1/2 tsp salt 
- 
Black pepper 
- 
1/4 cup chopped fresh coriander 
- 
1/2 cup chopped green olives 
- 
100g sprouts 
- 
1 avocado, diced 
- 
180g halloumi, sliced and grilled 
Instructions
- 
In a large mixing bowl, place the kale, orange juice and zest, vinegar, tamari and garlic. Massage well with your hands for a few minutes. 
- 
Add the rest of the ingredients (except avocado and halloumi) and stir well. 
- 
Top with avocado and halloumi.
