Kale Salad with Avocado and Halloumi

Ingredients

  • 6-8 kale leaves, finely chopped

  • Juice and zest of half an orange

  • 1 Tbsp balsamic vinegar

  • 1 Tbsp tamari

  • 1 tsp minced garlic

  • 2 cups grated carrot

  • 1 cup finely chopped red cabbage

  • 1 cup toasted sunflower seeds

  • 1/2 tsp toasted cumin seeds

  • 1/4 cup currants

  • 1/4 cup cranberries

  • 1/4 red onion, finely chopped

  • 1/2 tsp salt

  • Black pepper

  • 1/4 cup chopped fresh coriander

  • 1/2 cup chopped green olives

  • 100g sprouts

  • 1 avocado, diced

  • 180g halloumi, sliced and grilled

Instructions

  1. In a large mixing bowl, place the kale, orange juice and zest, vinegar, tamari and garlic. Massage well with your hands for a few minutes.

  2. Add the rest of the ingredients (except avocado and halloumi) and stir well.

  3. Top with avocado and halloumi.
