Choc Zucchini Muffins

Ingredients

  • 1 cup wholemeal flour

  • 1/3 cup cocoa powder

  • 1 tsp baking soda

  • ¼ tsp baking powder

  • ¼ tsp salt

  • ½ cup canola oil

  • ½ cup brown sugar

  • 2 eggs

  • ½ cup plain yogurt

  • 1 tsp vanilla extract

  • 1 ½ cups grated zucchini

  • 3/4 cup dark chocolate buttons

Instructions

  1. Preheat the oven to 180°C. Grease or line a 12 hole muffin tray.

  2. Whisk the flour, cocoa, baking soda, baking powder and salt together in a large bowl.

  3. In another large bowl, use an electric mixer to beat the oil, brown sugar, eggs, yoghurt, vanilla, and zucchini together until combined. Pour into dry ingredients and mix until combined. Stir in the chocolate buttons.

  4. Pour mixture into the muffin tins and bake for around 15-18 minutes or until a skewer inserted into the centre comes out clean.
