Creamy Tomato Prawn Pasta

Ingredients

  • 300g spaghetti

  • 1.5 Tbsp butter

  • 1 onion, diced

  • 2 Tbsp minced garlic

  • 500g prawns

  • 400g tinned tomatoes

  • 1 tsp vege stock

  • 2 tsp dried basil

  • 2 tsp dried parsley

  • 1/4 tsp chilli flakes

  • 2 courgettes, diced

  • 2/3 cup milk

  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to packet instructions.

  2. Heat a large pan over medium heat. Add butter. Once melted add onion and cook for 3-4 minutes. Add garlic, cook for a further 1 minute.

  3. Add prawns to the pan and cook on either side for 2 minutes.

  4. Add tomatoes, stock, basil, parsley, chilli flakes and courgette. Simmer for 5 minutes, then add milk and simmer for a further 5 minutes. Season to taste with salt and pepper.

  5. Divide spaghetti among bowls and top with prawn mixture.

    Serves 4-5.
