Creamy Tomato Prawn Pasta
Ingredients

300g spaghetti 
- 
1.5 Tbsp butter 
- 
1 onion, diced 
- 
2 Tbsp minced garlic 
- 
500g prawns 
- 
400g tinned tomatoes 
- 
1 tsp vege stock 
- 
2 tsp dried basil 
- 
2 tsp dried parsley 
- 
1/4 tsp chilli flakes 
- 
2 courgettes, diced 
- 
2/3 cup milk 
- 
Salt and pepper to taste 
Instructions
- 
Cook spaghetti according to packet instructions. 
- 
Heat a large pan over medium heat. Add butter. Once melted add onion and cook for 3-4 minutes. Add garlic, cook for a further 1 minute. 
- 
Add prawns to the pan and cook on either side for 2 minutes. 
- 
Add tomatoes, stock, basil, parsley, chilli flakes and courgette. Simmer for 5 minutes, then add milk and simmer for a further 5 minutes. Season to taste with salt and pepper. 
- 
Divide spaghetti among bowls and top with prawn mixture. Serves 4-5.
