Slow Cooker Pumpkin Soup
Instructions
- 
Put all ingredients except coconut cream in the slow cooker on low for 6-8 hours or until the vegetables are tender. 
- 
Mash mixture until smooth, add in coconut cream and cook for another 30 minutes to heat back up.

10 cups pumpkin/butternut, cubed 
- 
2 carrots, diced 
- 
1 onion, diced 
- 
3/4 cup split dry red lentils 
- 
2 tsp garlic, minced 
- 
2 tsp cumin 
- 
2 tsp paprika 
- 
4-5 cups vege stock 
- 
1 cup coconut cream 
- 
Salt and pepper to taste
