Prawn & Chorizo Paella
Instructions
- 
Fry garlic and onion in a pan with a dash of oil, lightly brown. 
- 
Add all other vegetables and chorizo to the pan, cook until softened (stir frequently). Season with salt and pepper. 
- 
In a pot add tinned tomatoes and chopped tomatoes. Season with salt and pepper. Bring to the boil and let simmer. 
- 
Remove vegetables from pan and set aside. 
- 
Add prawns to pan and fry for 5 minutes, turning occasionally. 
- 
Add prawns and rice to tomato pot and let simmer for 10 minutes or until rice is cooked to desired texture, stirring frequently to avoid rice sticking to the pot. 
- 
Add vegetables into prawn/tomato/rice pot. Add a squeeze of lemon juice and a dash of paprika to taste. Simmer for 5-10 minutes. 
- 
Plate up!

2 tins tomatoes

1.5 cups rice
