Winter Vege Soup

 Instructions

  1. Sauté onion and garlic in a pan with olive oil until clear.

  2. Put onions with all other ingredients in the slow cooker, stir well.

  3. Cook on low for 8 hours or until veges are tender.

Serves 6-8

 Ingredients 

  • 1 onion, diced

  • 2 tsp minced garlic

  • 1 tbsp olive oil

  • 2 carrots, diced

  • 250g beans, chopped

  • 2 kumara, diced

  • 2 tomatoes, diced

  • 1 can kidney beans

  • 1 can chickpeas

  • 1 tbsp soy sauce

  • 2 tsp paprika

  • 2 tsp basil

  • 1 tsp turmeric

  • 1 tsp cayenne pepper

  • Salt and pepper

  • 6 cups vege stock
