Smokey Paprika Potato and Avo Salad
Ingredients
- 
1kg potatoes 
- 
1 avocado, diced 
- 
1 capsicum, finely chopped 
- 
1/2 red onion, finely chopped 
- 
1 tin whole corn kernals, drained 
- 
1 tsp smoked paprika 
- 
1 tsp basil 
- 
1/4 cup Greek yoghurt 
- 
1/4 cup aioli 
- 
Salt and pepper to taste 
Instructions
- 
Bring a large pot of salted water to the boil. 
- 
Cut potatoes into 2cm cubes and cook in the boiling water until softened slightly. Drain. 
- 
Mix potatoes with all other ingredients. 
Serves 8
