Prawn Poke Bowl

Ingredients

Sauce

  • 2 Tbsp honey

  • 2 Tbsp chilli sauce

  • 4 tsp sesame oil

  • 6 Tbsp soy sauce

Rice bowl

  • 2 cups rice

  • 2 carrots

  • 1 capsicum

  • 300g edamame beans

  • 1 spring onion

  • 500g prawns

  • 2 tsp sesame seeds

  • Aioli

Instructions

  1. Cook rice in a rice cooker with 4 cups water.

  2. Chop capsicum and carrot into thin strips. Finely chop coriander. Chop spring onion into rounds.

  3. Mix sauce ingredients together in a bowl and set aside.

  4. Cook edamame beans in 1 Tbsp olive oil over high heat for 5 minutes or until cooked. Stir frequently. Set aside.

  5. Cook prawns in a dash of olive oil for 1 minutes either side. Drain. Then add in sauce ingredients and simmer for 5-10 minutes.

  6. Divide all ingredients between bowls and top with sesame seeds and aioli.

Serves 4-5
