Kiwifruit, Lime and Coconut Muffins
Ingredients

1 ½ cups flour 
- 
½ cup brown sugar 
- 
½ cup desiccated coconut 
- 
½ tsp baking powder 
- 
1 Tbsp lime zest 
- 
1 egg 
- 
¼ cup milk 
- 
90g butter, melted 
- 
3 kiwifruit, peeled and sliced 
Instructions
- 
Preheat the oven to 180°C fan bake. Line or grease a muffin tray. 
- 
Combine the flour, sugar, coconut, baking powder and lime zest in a bowl. 
- 
In another bowl, mix the egg, milk and butter. Stir into the dry ingredients until just combined. 
- 
Spoon the mixture into the muffin tray. Top with sliced kiwifruit and sprinkle with extra coconut if desired. Bake for 20-25 minutes or until a skewer inserted comes out clean.
