Mexican Quinoa

This one-pot Mexican quinoa is a brilliant meal for your baby. It’s loaded with iron from the quinoa and black beans, and the gentle spices help develop your little one’s palate. The soft texture is perfect for babies learning to manage lumpier foods. Uses low salt stock to keep it baby-friendly.

Ingredients

  • 1 cup quinoa

  • 1 ½ cups frozen corn/peas/beans

  • 1 can black beans, drained and rinsed

  • ½ red onion, sliced

  • 1 cup low salt stock

  • 1 can tomatoes

  • ½ tsp cumin, coriander, garlic powder, onion powder

Method

Add all ingredients and ½ cup water to a non-stick pan, bring to boil, then reduce the heat and simmer for 15–20 minutes or until all of the liquid is absorbed and the veges and quinoa are soft.

Serving Suggestion

Serve as is for self-feeding, or lightly mash with a fork for babies who need a softer texture.
