Tomato, Tofu Pasta
This tomato and tofu pasta is a brilliant way to get a variety of veges into your baby. The veges are roasted for extra flavour and then blended into a smooth sauce with tofu for added protein. It’s also a great way to use tofu to introduce the soy allergen.
Ingredients
1 carrot, finely chopped
1 capsicum, finely chopped
1 cup broccoli, finely chopped
1 cup kumara or pumpkin, finely chopped
½ onion, finely chopped
1 tsp minced garlic
½ tsp basil
Method
Add all ingredients to an oven tray and toss with olive oil.
Cook at 180°C for 20–30 minutes or until soft.
Add to the food processor with 1 tin of tomatoes and 200g tofu. Blitz until smooth.
Stir through 1–1.5 cups cooked pulse pasta or quinoa.
Serving Suggestion
Serve as is for self-feeding — the smooth sauce coats the pasta perfectly for little ones.
