Tomato, Tofu Pasta

This tomato and tofu pasta is a brilliant way to get a variety of veges into your baby. The veges are roasted for extra flavour and then blended into a smooth sauce with tofu for added protein. It’s also a great way to use tofu to introduce the soy allergen.

Ingredients

  • 1 carrot, finely chopped

  • 1 capsicum, finely chopped

  • 1 cup broccoli, finely chopped

  • 1 cup kumara or pumpkin, finely chopped

  • ½ onion, finely chopped

  • 1 tsp minced garlic

  • ½ tsp basil

Method

  1. Add all ingredients to an oven tray and toss with olive oil.

  2. Cook at 180°C for 20–30 minutes or until soft.

  3. Add to the food processor with 1 tin of tomatoes and 200g tofu. Blitz until smooth.

  4. Stir through 1–1.5 cups cooked pulse pasta or quinoa.

Serving Suggestion

Serve as is for self-feeding — the smooth sauce coats the pasta perfectly for little ones.
