Lentil Bolognese

This lentil bolognese is a brilliant plant-based meal for your baby. The lentils provide iron and give it a lovely hearty texture, and there are plenty of veges too. Serve with well-cooked pasta for a complete meal.

Ingredients

  • 2 carrots, grated

  • 1 onion, finely diced

  • 3 tsp minced garlic

  • 3 frozen spinach balls, defrosted

  • 1 Tbsp tomato puree

  • 1 tsp each of oregano, basil, pepper

  • 1 tin tomatoes

  • 1 tin lentils, drained and rinsed

Method

  1. Fry carrots, onion and garlic in a pan with a dash of olive for 5–10 minutes, until soft.

  2. Add the remaining ingredients and cook for 10–15 minutes. Blend slightly or mash before serving.

  3. Serve with well-cooked pulse pasta.
