Banana Bran Muffins with Dried Fruit and Natural Yoghurt
Instructions
- 
Preheat the oven to 200°C. 
- 
Place muffin cases in a 12 hole tray. 
- 
Sift flour and cinnamon into a mixing bowl. Add in a pinch of salt, bran, dried fruit and mix well. 
- 
In another bowl, mix maple syrup, oil, banana, vanilla, eggs, yoghurt and baking soda until smooth. 
- 
Fold the flour mixture into the wet mixture until combined (don’t over-mix). 
- 
Spoon into tray and bake for 20-25 minutes or until the tops are lightly golden and a skewer inserted comes out clean.

2 tsp ground cinnamon

1 ½ cups bran/oats 
- 
½ cup dried fruit 
- 
½ cup maple syrup 
- 
¼ cup olive oil 
- 
3 bananas, mashed 
- 
1 tsp vanilla essence 
- 
2 eggs 
- 
¾ cup natural yoghurt 
- 
1 tsp baking soda
