Falafel and Roast Vege Salad
Instructions
- 
Chop all the veges into bite sized pieces and spread out onto an oven tray. 
- 
Drizzle with olive oil and sprinkle with mixed herbs and garlic. 
- 
Roast on 180C for 30 minutes or until cooked through and beginning to crisp up. 
- 
Warm falafel bites. 
- 
Place a handful of spinach in each bowl, top with roast veges, 4 falafel bites and a dollop of hummus.

1 bag falafel bites (Alamir Bakery brand in Countdown or Pak n Save dips section are great) 
- 
1 tub hummus (I used Lisaโs Beetroot with Roasted Cashews) 
- 
1 bag spinach 
- 
2 kumara 
- 
1 courgette 
- 
1 carrot 
- 
1 green capsicum 
- 
1 red capsicum 
- 
1 onion 
- 
1 tbsp olive oil 
- 
1 tsp mixed herbs 
- 
1 tbsp crushed garlic
