    Cauliflower rice

    Method

    1. 1Mix kofta ingredients together until well combined. Shape into sausages and put onto a skewer to cook.
    2. 2Heat a large fry-pan on medium to high heat and cook koftas in a little oil, in batches for 6–7 minutes turning regularly until golden and cooked through. Alternatively cook on a BBQ hot plate.
    3. 3Chop cauliflower into florets. Pulse for about 10-15 seconds in a food processor until it resembles rice. Heat in the microwave for 2-3 minutes.
    4. 4Place cauliflower rice in a large bowl with the vegetables and fresh herbs, and mix well.
    5. 5Mix lemon juice, vinegar, oil, salt and pepper together and pour over rice mixture, stir to combine.
    6. 6Portion rice on plates and top with koftas and a dollop of hummus.
