Coconut Chicken

Ingredients

  • 400g chicken, roasted or boiled

  • 1 kumara, chopped and steamed

  • 1 carrot, chopped and steamed (or 1 cup frozen beans, steamed)

  • 165ml coconut milk

Method

  1. Cook the chicken for around 15 mins (until cooked through), steam kumara and carrots for around 10 mins (until soft).

  2. Blend with the coconut milk until smooth pureed (or to desired texture).

  3. Serve. Spoon the remainder into ice trays and freeze for later.
