Chicken Meatballs

These chicken meatballs are a wonderful finger food for your baby. The hidden veges and avocado make them extra nutritious, and the lemon juice and basil add lovely flavour. Bake a big batch and freeze for busy days.

Ingredients

  • ½ carrot, chopped

  • 1 onion, chopped

  • ½ avocado

  • 2 tsp minced garlic

  • 1 egg

  • 1 Tbsp lemon juice

  • 450g chicken mince

  • ½ tsp basil

Method

  1. In a food processor blitz carrot, onion, avocado and minced garlic.

  2. Add the egg and lemon juice and blitz again. Add all to a bowl with chicken mince, basil and pepper, and combine well.

  3. Line an oven tray with baking paper and bake in a pre-heated oven at 200°C for 15–20 minutes or until cooked through.
