Corn And Pea Muffins

These corn and pea muffins are a wonderful savoury finger food for your baby. They’re packed with veges, egg, and cheese, making them super nutritious. Bake a batch and freeze for easy grab-and-go meals.

Ingredients

  • 3 eggs

  • 1 cup frozen peas and corn

  • ¼ cup flour

  • 1 tsp baking powder

  • ¼ cup grated cheese

Method

  1. Preheat the oven to 180°C.

  2. Blend eggs and defrosted veges in a food processor. Transfer to a bowl and add in flour, baking powder and cheese.

  3. Pour into mini silicon muffin tins and bake for 10–15 minutes or until lightly browned on top.
